Pretty Pink

This lusciously creamy juice was grown, in part, by me! I have a backyard garden and yesterday I pulled the most beautiful chioggia beet I’ve ever seen — I almost didn’t want to juice it because it was so gorgeous! Maybe I’m just a proud mom, but it tasted just as good as it looked! It was sweet and smooth without the heavy earthiness of a red beet.

Yield ~10 ounces
  • 1 chioggia (stripped) beet — or golden beet
  • 4-5 small, purple carrots
  • 1 orange
  • 1 small tomato
  • Ginger, to taste
  1. Juice everything.
  2. Enjoy!
If you don’t have access to a chioggia beet, the golden variety will also give you a less-intense beet taste. Also, if you have the opportunity try purple carrots. They’re lower in sugar than their orange relatives.
